It's been 8 years since I started working on projects around **organic waste valorization** and alternative **protein production**. I got into it because I believed it was one of the few concrete actions I could take to help address a likely food crisis in the near future.

But over time, it became clear to me that no single solution will be enough. We're going to need multiple, diverse, and scalable sources of protein - whether insect-based, plant-based, fungal, or others.

Among all of these, microbial proteins and precision fermentation stand out as two of the most promising technologies. The potential to decouple protein production from traditional agriculture is not only revolutionary, but necessary.

Now, at Elytra Biomaterials, we're developing custom Machine Learning solutions for R&D, and I'm genuinely excited by how AI can help us accelerate and scale the innovation required in this space.

I'd love to hear from others working in microbial protein, fermentation, or AI for foodtech - What do you see as the biggest technical or commercialization challenges? Where are the real opportunities?

Thanks in advance to anyone who takes the time to share their insights.

All the best,
