Hi Nicole,
This could be an exciting opportunity for our indoor pilot farm. Our team is entirely focused on research and development, with no culinary arts expertise. We may be the only full-production farm in Canada located in a downtown core with a "farm gate" (retail store) attached. While our ability to grow exceptional produce continues to become more efficient-thanks in part to the students from SLC and Queen's University-we still face challenges in fully leveraging our unique growing capabilities.

There are lots of chefs who do R&D and Sensory. Good groups to contact to access large and diverse groups of chefs include Chef's Canada and The Culinary Federation of Canada.
I would expect that most chef schools also have alumni directories.

A really great way to access these resources is through Applied Research at Colleges. The faculty in these programs are highly knowledgeable with diverse backgrounds and skill sets. As well, working with student researchers provides truly innovative ideas.
